Mayonnaise contrasts in color, but is often white, cream, or pale yellow. It may range in texture from that of light cream to a thick gel. As we know that homemade mayonnaise is always better than store-bought mayonnaise. It contains real lemon juice, healthy oils and tastes good in salads or dips. The word mayonnaise was not used for a sauce before the start of the nineteenth century. Mayonnaise is very prevalent in Russia where it is made with sunflower seed oil which gives it a very individual flavor.
